Crock Pot Sweet Chicken Chili Recipe
Ingredients
- 2 pounds (960 g) boneless and skinless chicken breasts
- 1/2 cup (125 ml) sweet chili sauce
- 1 cup (250 ml) chicken stock
- pinch of salt
- 1/4 cup (60 ml) low-sodium soy sauce
- 1/4 cup (60 ml) water
- 2 tablespoons cornstarch
- chopped fresh cilantro, for garnish
Method
Step 1
In a 6-quart (6 L) slow cooker, combine chili sauce, chicken stock, 1/4 teaspoon salt, and soy sauce. Stir well.
Step 2
Add chicken breasts and toss well to coat.
Step 3
Cover the pot and cook on high-heat setting for 2Β½-3Β½ hours.
Step 4
30 minutes before serving, combine the water and cornstrach. Mix until cornstarch has dissolved completely. Add the mixture to the cooker and stir well.
Step 5
Close the lid and continue cooking on high-heat setting for a further 20-30 minutes.
Step 6
Remove cooked chicken from the crock pot and transfer to a cutting board. Using two forks, shred the meat. Transfer to a srving plate. Pour thickened sauce over. Sprinkle with chopped cilantro. Serve hot.
