Ingredients
- 3 pounds (1.44 kg) boneless and skinless chicken breasts
- 2/3 oz (20 g) package Italian salad dressing mix
- 4 tablespoons melted unsalted butter, divided
- 1 small yellow onion, peeled and chopped
- 1 garlic clove, peeled and chopped
- 10½ oz (315 ml) can cream of chicken soup
- 1/2 pound (240 ml) cream cheese
- 1/2 cup (125 ml) reduced-sodium fat-free chicken broth
- 1 cup (250 ml) sliced mushrooms

Method
Step 1
Ina large nonstick skillet, heat olive oil over medium-high heat. Add chicken breasts and sear on both sides for about 1 minute per side. Place chicken breasts in a 6-quart (6 L) crock pot. Sprinkle Italian seasoning over, then pour in 2 tablespoons (30 ml) melted butter.
Step 2
Cover the crock pot and cook on low-heat setting for 4-6 hours.
Step 3
One hour before it is ready, in a small saucepan, heat the remaining butter over medium heat. Add the onion, mushrooms, and garlic and sauté, stirring occasionally, until the onion is translucent. Stir in remaining ingredients. Mix until smooth.
Step 4
Open the lid and stir in creamy mixture. Close the crock pot and cook for a further 1 hour.
