Ginger-Orange Chicken Breasts and Squash Stew

Ingredients: 1½ pounds (720 g) boneless and skinless chicken breasts, cut into cubes, 1 cup (250 ml) low-sodium fat-free chicken broth, 14½ oz (435 ml) diced tomatoes, undrained, 1/2 cup (125 ml) freshly squeezed orange juice, 3 cups (750 ml) peeled and cubed winter yellow squash, 2 medium potatoes, peeled and cut into cubes, 3/4 cup (180 ml) each: coarsely chopped yellow onions, green bell peppers, 2 cloves garlic, peeled and minced, 1 tablespoon (15 ml) grated orange zest, 1/2 teaspoon (3 ml) freshly ground ginger, 1/2 cup (125 ml) reduced-fat sour cream, 1 tablespoon (15 ml) cornstarch, salt and freshly ground black pepper, to taste, 4 cups (1 L) cooked noodles

Instructions: In 6-quart (6 l) crockpot, combine all ingredients, except sour cream, cornstarch, seasoning, and cooked noodles. Cover cooker and cook on low-heat setting for 6-8 hours. Open the lid and stir in combines our cream and cornstarch. Cook, stirring, for 2-3 minutes.

Turn off crockpot. Stir well the chicken mixture. Transfer it to serving plates. Serve over cooked noodles.

Crockpot Cheesy Chicken Breasts Recipe

Ingredients

  • 3 pounds (1.44 kg) boneless and skinless chicken breasts
  • 2/3 oz (20 g) package Italian salad dressing mix
  • 4 tablespoons melted unsalted butter, divided
  • 1 small yellow onion, peeled and chopped
  • 1 garlic clove, peeled and chopped
  • 10½ oz (315 ml) can cream of chicken soup
  • 1/2 pound (240 ml) cream cheese
  • 1/2 cup (125 ml) reduced-sodium fat-free chicken broth
  • 1 cup (250 ml) sliced mushrooms
  • olive oil

Method

Step 1

Ina large nonstick skillet, heat olive oil over medium-high heat. Add chicken breasts and sear on both sides for about 1 minute per side. Place chicken breasts in 6-quart (6 L) crockpot. Sprinkle Italian seasoning over, then pour in 2 tablespoons (30 ml) melted butter.

Step 2

Cover the crockpot and cook on low-heat setting for 4-6 hours.

Step 3

One hour before it is ready, in a small saucepan, heat remaining butter over medium heat. Add the onion, mushrooms, and garlic and saute, stirring occasionally, until onion is translucent. Stir in remaining ingredients. Mix until smooth.

Step 4

Open the lid and stir in creamy mixture. Close the crockpot and cook for further 1 hour.
