In the past home cook used to set aside a day a week to fill the cake and cookies tins. However, today baking is not done on such a grand scale and cooks have been searching for and developing recipes which take less time to prepare and bake.

Cookie dough which is pressed into a pan and after baking is cut into bars or those baked in small heaps on a baking sheet is extremely popular as there is no lengthy rolling and cutting to be done.

After baking, cool cookies on a wire rack, and the moment they are cool, place them in a tin or jar before they have absorbed any moisture from the air.

Cover with a piece of wax paper and tightly fitting lid.

Cookies, if stored correctly, will remain fresh for some time and are very handy for morning and afternoon tea or coffee suppers, and packed lunches.

The busy housewife can make a large quantity of cookie dough which may be rolled, wrapped and placed in the freezer.

For variety, a number of flavors, chopped nuts, or fruits may be added to the mixture before rolling and freezing.

Easy Baked Peanut Butter Cookies Recipe


  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 6 tablespoons brown sugar
  • 1/2 cup peanut butter
  • 1 large egg,beaten
  • 1¼ cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt


Step 1

In a mixing bowl, combine butter, sugars and peanut butter. Mix well. Add the beaten egg and stir well.

Step 2

Sift and stir in the flour, baking powder, baking soda, and salt. Chill dough for 15 minutes.

Step 3

Roll dough into balls the size of large walnuts. Place 3-inches (7.5 cm) apart on greased baking sheets. Flatten cris-cross fashion with a for dipped in flour.

Step 4

Bake in preheated (375 F) oven for about 15 minutes. Cool for a few minutes on the baking sheets before removing to a cooling rack.
