Double chocolate cookies. Chocolate cookies baked in a halogen (turbo) oven.
- 2 oz (60 g) semisweet chocolate,thinly chopped
- 2 oz (60 g) white chocolate,thinly chopped
- 2 oz (60 g) superfine sugar
- 6 tablespoons butter,softened
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk
- 1 egg yolk
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup rolled oats
Lightly grease 2-3 baking trays with cooking spray. Place the low grilling rack in turbo oven.
Combine the sugar and butter in mixing bowl and beat until smooth. Add the vanilla extract, milk and egg yolk and mix well.
Combine baking powder and all-purpose flour and mix into the creamed mixture with oats and chocolate. Set turbo oven temperature to 325°F (160°C).
Spoon large teaspoons of mixture into rounds of prepared baking trays(4-6 per tray) and flatten slightly. Bake one tray at a time for 7-12 minutes, until golden and risen. Remove double chocolate cookies from the turbo oven and leave to cool for 5 minutes on the baking tray. Cook the second tray of double chocolate cookies. Transfer each batch of baked cookies to a wire rack rack to cool completely.
