Creamy Roquefort Dip Recipe
Serve this delicious dip with crisp leaves of Romain lettuce, salt-roasted potatoes or spears of Belgian endive.
Makes 2 cups (500 ml)
Ingredients: 6 oz (180 g) Roquefort cheese, 3/4 cup (180 ml) half-and-half cream, 2 tablespoons fresh tarragon leaves, salt and freshly ground black pepper, to taste
Instructions: In a food processor fitted with metal blade, combine Roquefort cheese, half-and-half, and tarragon. Process until smooth, for about 30 seconds. Season to taste with salt and black pepper and stir well.
Transfer to a serving plate. Wrap with a plastic wrap and refrigerate until ready to serve (for up to 3 days).
Blue Cheese Dressing Recipe
Makes 1Β½ cups (375 ml)
Ingredients: 1/2 cup (125 ml) reduced-fat yogurt, 1/4 cup (60 ml) buttermilk, 1/4 cup crumbled blue cheese, 1/2 medium-sized cucumber, peeled, seeded, and coarsely grated
Instructions: In a medium mixing bowl, combine yogurt and buttermilk. Mix well. Stir in blue cheese and cucumber. Cover tightly and refrigerate until ready to serve. Stir well before each use.

Ingredients
- 1Β½ cups crumbled blue cheese
- 1/2 cup (125 ml) milk
- 2 oz (60 g) cream cheese, softened
- 1 teaspoon dried oregano
Method
Step 1
In a medium mixing bowl, combine blue cheese, milk, cream cheese, and oregano. Mix until smooth.
Step 2
Serve immediately and cover and refrigerate for up to 3 days. Reheat dip before serving.
