Tossed Salad with Lemony-Mustard Dressing Recipe
Makes 10 servings
Ingredients: 2 10 oz ((300 g) each) bags spinach, 1 medium head Boston lettuce, 2 small endives, 1/2 pound (240 g) medium mushrooms, 2/3 cup (160 ml) olive oil, 2 teaspoons granulated, sugar, 1Β½ teaspoons salt, 1 teaspoon dry mustard, 1 teaspoon frozen chopped chives, thawed and drained, 1/4 teaspoon cracked black pepper
Dressing: 1 large lemon
Instructions: In a chilled large mixing bowl, tear spinach and lettuce leaves into bite-size pieces. Cut Belgian endives in half crosswise and separate the top leaves. Cut bottom leaves into wedges. Thinly slice mushrooms. Stir in endives and sliced mushrooms to the spinach mixture.
Prepare the Dressing: Finely grate 2 teaspoons peel from the lemon. Squeeze juice from lemon to make 1/4 cup (60 ml). In a small mixing bowl, combine grated lemon peel, squeezed juice, olive oil, and remaining ingredients. Whisk, using a fork.
Pour dressing over vegetable salad. Gently toss to mix well and thoroughly coat all vegetables. Serve and enjoy!
Easy Crunchy Garlic Croutons Recipe

Ingredients: 5 cups cubed bread, 2 tablespoons (30 ml) unsalted butter, 1 oz (30 ml) Extra Virgin olive oil, 2 medium garlic cloves, peeled and pressed, 1 tablespoon (15 ml) finely chopped fresh parsley, 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper
Instructions: In a small saucepan, heat the butter and olive oil over medium heat. Add pressed garlic and chopped fresh parsley. Stir well to combine, then set aside and let the flavors infuse into the oil.
Place cubed bread in a large mixing bowl. Drizzle the seasoned olive oil over your chopped bread and toss until the breadcrumbs coat well with the oil mixture. Spread the bread in a single layer on a baking sheet and bake in preheated (375ΒΊ F (190ΒΊ C)) oven for about 20 minutes or until the bread cubes are golden brown and crunchy.

- 1 Β½ pounds (720 g) medium shrimp, peeled and deveined
- 2 tablespoons grated Parmesan cheese
- 10 oz (300 g) chopped fresh Romaine lettuce
- 2 ripe tomatoes, sliced
