Easy creamy potato salad recipe.

Very delicious vegetable salad. Ready in 2 minutes!
The potato is a most comforting vegetable.
We have become used to thinking of vegetables as playing second fiddle to meat, as an afterthought that provides the balance of color and texture that a well-put-together plate requires. And in fact, vegetables are very important in this respect; it is much easier to produce a dinner plate, or a buffet table, that is vibrant, interesting, and well-balanced when you have the whole vegetable kingdom at your disposal.

French Creamy Potato Salad Recipe

makes 4 servings
Ingredients: 1 pound (480 g) new potatoes, scrubbed and quartered, 1/4 pound (60 g) bacon, chopped, 1/4 cup finely chopped shallots, 1/4 cup (60 ml) red wine vinegar, 2 tablespoons olive oil, salt and freshly ground black pepper, to taste, 1/4 cup chopped red onion, 1/2 cup chopped fresh parsley

Instructions: Place potatoes in a saucepan with cold, salted water. bring to a boil over medium-high heat and cook until tender, for 8-10 minutes. Using a colander, drain cooked potatoes and place them in a mixing bowl.

Meanwhile, in a small nonstick skillet, sauté chopped bacon over medium heat until crisp. Remove cooked bacon from the skillet, and set aside, reserving drippings.

Add chopped shallots to the skillet and sauté over medium heat until tender not at all browned, for about 5 minutes. Reserve cooked shallots and remaining fat.

Pour the vinegar, olive oil, cooked shallots, and reserved bacon fat over hot potatoes. Season with salt and black pepper. Toss well. Add chopped red onion and parsley and toss again. Cool potato salad at room temperature, then cover with plastic wrap and refrigerate. Enjoy!

American Creamy Potato Salad Recipe

makes 20 servings
Ingredients: 4 pounds (1.9 kg) boiling potatoes, peeled, 1/2 cup (125 ml) white wine vinegar, 1/2 cup (125 ml) olive oil, 1 teaspoon salt, 1/4 teaspoon black pepper, 1 cup thinly sliced red onions, 1 cup celery strips, 3 fresh cucumbers, peeled, seeded and sliced, 2 cups (500 ml) mayonnaise (I used my Easy Healthy Homemade Mayonnaise), plus extra if needed, 5 tablespoons prepared Dijon-style mustard, 20 hard-cooked eggs, peeled and quartered, 1 cup chopped fresh Italian parsley

Instructions: Place peeled potatoes in a saucepan with cold salted water. Bring to a boil over medium-high heat. Cook until tender. Using a colander, drain cooked potatoes and put them in a mixing bowl. Slice them. Sprinkle hot potatoes with white wine vinegar, and olive oil. Season to taste with salt and black pepper.

Add chopped red onions, celery, cucumbers, mayonnaise, and Dijon mustard. Toss well to combine. Add quartered eggs and chopped Italian parsley and toss again. Taste for seasoning and add more mayonnaise if needed.

Easy Creamy Potato Salad Recipe

Ingredients

  • 1/2 pound (240 g) cooked red potatoes, pared and diced
  • 1/2 cup sliced celery
  • 1/4 cup sliced scallions (green onions)
  • 1/4 cup diced red bell peppers
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon chopped fresh cilantro
  • 1 teaspoon granulated sugar
  • dash freshly ground black pepper
  • 1/2 cup (125 ml) mayonnaise

Method

Step 1

Using a rubber scraper, in a medium bowl, combine all ingredients. Stir well to coat.

Step 2

Transfer to serving plates. Enjoy your potato salad.
