Slow Cooker Chicken Chowder Recipe
Cubed chicken breast tenderloins with vegetables cooked in a slow cooker. Use a 4-6 quart (4-6 L) slow cooker for this chicken chowder. Very easy and delicious chicken soup recipe.
Makes 4 servings
1/2 cup (125 ml) shredded carrots
1 large baking potato, peeled and chunked into 1/2-inch (1.25 cm) chunks
1/2 pound (240 g0 boneless and skinless chicken breasts, cut into 1-inch (2.5 cm) pieces
1 cup (250 ml) nonfat half-and-half
1/2 cup (125 ml) low-sodium fat-free chicken broth
2 cans (15 oz (450 ml) each) of cream-style corn
1/4 teaspoon (1 ml) freshly ground black pepper
1/4 teaspoon (1 ml) onion powder
2 tablespoons (30 ml) chopped fresh green onions
1/2 cup (125 ml) instant mashed potato flakes
1/2 cup (125 ml) nonfat shredded cheddar cheese
Instructions: Lightly grease inside the slow cooker with nonstick cooking spray. Place shredded carrots, chunked potato, and cubed chicken in the slow cooker. Stir well to combine.
In a medium mixing bowl, combine half-and-half, chicken broth, black pepper, onion powder, and green onions. Mix well and pour half-and-half mixture over chicken and vegetables. Stir well.
Cover slow cooker and cook on low-heat setting for 5-6 hours or until chicken and vegetables are tender. Open the lid and stir in mashed potato flakes, then increase heat to high and cook for a further 5-10 minutes until the chicken mixture has thickened and the flakes have dissolved.
Turn off the slow cooker. Ladle chicken soup into soup bowls. Sprinkle with shredded cheddar cheese and serve immediately.
Easy Slow Cooker Chicken Tortellini Soup Recipe

- 1½ pounds (720 g) boneless and skinlees chicken breasts
- 3 medium carrots, peeled and diced
- 3 stalks celery, diced
- 1 medium yellow onion, peeled and diced
- 3 cloves garlic, peeled and minced
- 6 cups (1.5 L) low-sodium fat-free chicken broth
- 1 cup (250 ml) water
- 2 bay leaves
- 1 teaspoon Italian seasoning
- 2 cups cheese tortellini
- chopped fresh parsley
- salt and freshly ground black pepper, to taste
In a 4-6-quart (4-6 l) slow cooker, combine all ingredients, except tortellini. Mix well.
Cover the cooker and cook on a low-heat setting for 6 hours.
Open the lid and, using tongs, remove the cooked chicken from the slow cooker. Transfer to cutting board and shred it. Return shredded chicken to the slow cooker. Stir in tortellini, cover, and cook for a further 15 minutes or until they are cooked all the way through.
Turn off the slow cooker and open the lid. Discard bay leaves. Season to taste with salt and black pepper.
Ladle chicken tortellini soup into soup bowls. Sprinkle with chopped fresh parsley and serve hot.
