What is tortellini? Tortellini is a kind of Italian pasta, which is usually stuffed with cheese or meat. Very often tortellini served in broth or with sauces (tomato sauce, mushroom sauce, or any kind of meat sauce)

How to Cook Tomato Tortellini Soup in Slow Cooker

Makes 6-8 servings

Ingredients: 1 pound (480 g) Italian sausages (I used mild), 4 cups (1L) reduced-sodium fat-free chicken broth, 28 oz (840 ml) can diced tomatoes, undrained, 2 cans 10¾ oz (325 ml) each tomato soup, 2 8 oz (240 ml) each container chive and onion cream cheese spread, softened, 18 oz (540 g) package frozen cheese tortellini, uncooked

First, cut sausages into bite-size pieces. In a large nonstick skillet, heat olive oil over medium-high heat. Add sliced sausages and cook, stirring occasionally, until they are nicely browned and no longer pink.

Remove browned sausages from the skillet and transfer them to a slow cooker (I use a 6-quart (6 L) slow cooker). Pour in the chicken broth, then add tomatoes and tomato soup. Stir well.

Close the cooker and cook in a low-heat setting for 6-8 hours or until sausages are cooked through.

Open the lid and stir in cream cheese and uncooked tortellini. Close the pot and cook on a high-heat setting for a further 15-30 minutes or until tortellini is tender.

Turn off the slow cooker and open the lid. Stir the soup well before serving. Ladle into soup bowls and serve hot.

    This soup was amazing! I usually tweak a recipe but not this one. I made it exactly the way the way described and it was perfect. A new family favorite.
