Fried Cheesy Fish Coquettes
Ingredients
- 8 oz (240 g) skinless and boneless white fish fillets
- 1 cup (250 ml) milk
- 1 small yellow onion, peeled and finely chopped
- 2 oz (60 g) unsalted melted butter
- 2 oz (60 g) plain flour
- 1 hard boiled egg, shelled and finely chopped
- 1 tablespoon grated Parmesan cheese
- salt and freshly ground black pepper,to taste
- cooking oil for frying
Method
Step 1
In a large frying pan, combine white fish fillet and milk. Cover and cook over medium heat for about 10 minutes or until fish is tender. Lift fish out of milk. Mash the flesh and reserve milk.
Step 2
In a frying pan, combine melted butter and onion. Fry until onion transparent. Add plain flour and cook, stirring, for a further 2 minutes. Gradually stir in reserved milk and bring to a boil.
Step 3
Remove pan from the heat. Add mashed fish. Add chopped egg and grated Parmesan cheeses to the sauce. Season to taste with salt and black pepper. Spread mixture thickly onto a plate, cover and chill until firm.
Step 4
Divide fish mixture into four and shape on a well floured board into round patties about 1/2 inch(1.25 cm) thick.
Step 5
Heat cooking oil in a deep fryer to 340 F (170 C). Fry fish croquettes for 5 minutes until crisp and golden. Using tongs, remove fried cheesy fish croquettes from deep fryer. Drain on paper towel and serve hot.
