Oven-baked fish patties recipe. This recipe is very simple and delicious. Serve fish cakes with spinach salad and tartar sauce. Here is another way to make patties-oven fried salmon cakes. I”m whipping together these delicious salmon patties in a few minutes and keeping them low in fat by baking instead of frying them. They would make a nice brunch, luncheon, or buffet offering.
Preparation tip: Fish patties can be prepared ahead for baking, or they can be baked ahead and reheated, covered, in the oven, or in the microwave before serving.
Oven Baked Fish Patties Recipe
Makes 4 servings
Ingredients: 1 15 oz (450 ml) can salmon, drained and flaked, 1 cup fresh breadcrumbs, 1 large egg or 2 egg whites, lightly beaten, 1/4 cup minced scallions, 2 tablespoons freshly squeezed lemon juice, 1 teaspoon Worcestershire sauce, oil spray
Instructions: Preheat the oven to 400º F (200º C). In a medium-sized bowl, thoroughly combine all ingredients except the oil spray. Shape them into 8 patties. Arrange the patties on a cooking sheet that has been sprayed with oil spray.
Place the sheet in the preheated oven, and bake the patties for 5 minutes or until they are golden on all sides. Turn off the oven. Using a wooden spatula, remove baked salmon patties from the oven and transfer to the serving platter. Serve hot accompanied by mashed potatoes and fresh vegetable salad.
Oven Baked Fish Patties Recipe
Ingredients
- 1 pound (480 g) fish (salmon or cod),flaked
- 2 cups (500 g) cooked mashed potatoes
- 1 large egg, beaten
- 1/2 cup (135 g) chopped celery
- 1/4 cup (60 g) chopped green onions
- 1/4 cup (60 g) mayonnaise
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh dill weed
- 1 teaspoon Dijon mustard
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons melted butter
Method
Step 1
In a large mixing bowl, combine all ingredients, except melted butter. Mix thoroughly.
Step 2
With dampened hands, shape fish mixture into 8-10 cakes.
Step 3
Line a baking sheet with parchment paper. Place fish cakes on baking sheet and brush them with melted butter.
Step 4
Preheat an oven to 400 F (200 C). Bake fish cakes in preheated oven until cakes are golden brown (for 20-25 minutes).

takes longer than posted time to get golden brown, at 35 min. just started to turn brown
