Ingredients
- 1 teaspoon Asian chile paste
- 2 garlic cloves,peeled
- 2 tablespoons unsalted rice vinegar
- 1 tablespoon soy sauce
- 1½ teaspoons sugar
- 1 teaspoon sesame oil
- 1/4 cup (60 ml) vegetable oil
- 4 scallions,white and green parts
- 4 beef tenderloin steaks
- salt and freshly ground black pepper to taste
- 1½ cups shelled edamame,thawed
- 6 radish,sliced
- 1 bunch of watercress,thick stems discarded
- sesame seeds,for garnish
Method
Step 1
Preheat oven to 450°F(177°C).
Step 2
In blender or food processor,combine Asian chile paste,garlic,vinegar,soy sauce,sugar with sesame oil. Blend until the dressing is smooth.
Step 3
Then blend in the vegetable oil until is incorporated. Lightly brush the scallions and steaks with 1 tablespoon of resulting dressing. Season with salt and freshly ground black pepper.
Step 4
Cook over moderately high heat,turning occasionally,about 5 min for the scallions and 8 min for medium-rare steaks. Set grilled beef steak aside for 5 min,then slice. Cut the scallions into small pieces(about 1/2-inch). Transfer them to a bowl. Add the edamame,radishes,watercress and 5 tablespoons of the dressing. Toss well.
Step 5
Arrange salad on plates and place sliced grilled beef steak alongside. Sprinkle the remaining dressing over the grilled beef steak. Sprinkle with sesame seeds. Serve immediately.
