Grilled salmon with mustard and brown sugar crust recipe. This salmon recipe so simple and easy to make, it is almost embarrassing. You may also like Lemon Basil Salmon Roast:
Lemon Basil Salmon Roast Recipe
Makes 4-6 servings
Ingredients: 1 large piece boneless salmon fillet, skin-on, 2 medium lemons, kosher salt, freshly ground black pepper, 12 whole fresh basil leaves, rinsed and blotted dry, Lemon Basil Mustard Sauce (see recipe below)
Instructions: Rinse salmon fillet under cold running water and pat dry with paper towels. Cut lemon rind completely, then slice thinly the fruit crosswise. Remove any seeds, using a fork. Cut another lemon into 6 wedges and set aside (keep them for serving).
Cut the salmon fillet in half lengthwise, then cut four 18-inch (45 cm) pieces of butcher’s string. Arrange them on a work surface. Place one piece of salmon skin side down across the strings. Season fish with salt and black pepper. Arrange the lemon slices on seasoned fillets, then top with basil leaves.
Season the meat size of remaining salmon fillet with salt and black pepper. Place seasoned fillet skin side up on top of the first and tie each of 4 pieces of string together tightly.
Cut 2 pieces of string that are 28 inches (65 cm) long. Loop each piece around the fillets lengthwise and tight them together tightly. Season with salt and black pepper.
Place the drip pan in the bottom of a rotisserie. Skewer the salmon roast lengthwise on the rotisserie spit. Attach the spit to the rotisserie and turn on the motor. Set the temperature control at 400º F (200º C). Cook salmon until it cooked through, for about 45-55 minutes.
Transfer salmon roast to a serving platter and remove the spit. Cut off and discard the strings. Slice baked salmon into 6 slices. Serve with Basil Mustard Sauce and lemon wedges.
Lemon Basil Mustard Sauce
Makes about 1½ cups (375 ml)
Ingredients: 6 fresh basil leaves, rinsed and patted dry, 1 cup (250 ml) homemade mayonnaise, 1/4 cup (60 ml) sour cream, 1½ teaspoons finely grated lemon zest, 1 tablespoon (15 ml) freshly squeezed lemon juice, 2 tablespoons (30 ml) Dijon mustard, 1 tablespoon (15 ml) dry mustard
Instructions: Slice basil leaves into small slices. In a mixing bowl, combine half of the sliced basil leaves and remaining ingredients. Mix well. Transfer sauce to serving bowl and top with remaining sliced basil.

Ingredients
- 4 pieces salmon fillet
- kosher salt and freshly ground black pepper
- 1 cup dark brown sugar
- 3 tablespoons Dijon mustard
Method
Step 1
Rinse salmon fillets under cold running water. Pat dry with paper towels. Season the fish on both sides with salt and black pepper.
Step 2
Spread each salmon fillet on both sides with Dijon mustard, then dredge in the brown sugar. Shake off any excess brown sugar.
Step 3
Cook seasoned salmon fillets, follwoing the instructions for any grills, until outside is darkly browned and fish is cooked through. Transfer grilled salmon to a serving platter. Serve hot.
