Slow Cooker Barley-Bean Vegetable Soup Recipe
Very easy and delicious vegetarian soup cooked in a 6-quart (6 L) slow cooker.
Makes 8 servings
Ingredients: 15 oz (450 ml) can red kidney beans, drained, 10 oz (300 ml) can whole kernel corn, drained, 1/2 cup (125 ml) medium pearl barley, 14½ oz (435 ml) can stewed tomatoes with bell pepper and yellow onion, drained, 2 cups (500 ml) sliced fresh mushrooms, 1 cup (250 ml) chopped yellow onion, 1½ cups (375 ml) coarsely chopped carrots, 1/2 cup (125 ml) chopped celery, 1½ teaspoons (7½ ml) garlic powder, 2 teaspoons (10 ml) dried dillweed, 1/4 teaspoon freshly ground black pepper, 1 bay leaf, 5 cups (1.25 L) nonfat chicken broth (use vegetable broth if you are vegetarian)
Instructions: Grease 6-quart (6 ) slow cooker with nonstick cooking spray. Combine all ingredients in the slow cooker and mix lightly. Cover and cook on a low-heat setting for 8-10 hours.
Turn off the slow cooker and open the lid. Discard bay leaf. Adjust seasoning and stir well. Ladle barley-bean vegetable soup into soup bowls. Serve hot.
Homemade Chicken Barley Soup Recipe
Ingredients
- 14 oz (420 ml) can nonfat chicken broth
- 2 packages (16 oz (480 g) each) frozen mixed vegetables
- 1¼ cups pearl barley
- 4 cups (1 L) water
- 2 pounds (960 g) chicken breast tenderloin, cut into cubes
- 1 teaspoon Mrs. Dash seasoning
- 1/2 teaspoon freshly ground black pepper
Method
Step 1
In a 6-quart (6 L) slow cooker, combine all ingredients. Mix well.
Step 2
Cover cooker and cook on low-heat setting for 6 hours.
Step 3
Turn off the slow cooker and open the lid. Stir chicken barley chicken soup. Ladle into soup bowls. Serve hot.
