Slow Baked Chicken Drumsticks Recipe
Chicken drumsticks with spices, vegetables, and apricots cooked in a slow cooker. Very delicious!
Makes 4 servings
Ingredients: 2-3 pounds (960-1440 g) chicken drumsticks, 1 tablespoon (15 ml) coconut oil, half of the medium yellow onion, peeled and sliced into half rounds, 1 teaspoon (5 ml) ground cumin, 1 teaspoon (5 ml) ground turmeric, 1/2 teaspoon (3 ml) ground coriander, 1 teaspoon (5 ml) ground cinnamon, 1/2 teaspoon (3 ml) ground cardamom, 1/4 teaspoon (1 ml) cayenne pepper, 4 cloves garlic, peeled and minced, 1½ tablespoons (22.5 ml) grated fresh ginger, 1½ teaspoon (8 ml) sea salt, 2 cups (500 ml) low-sodium beef broth, 1 cup (250 ml) roughly chopped dried apricots, 2 cups (500 ml) cubed sweet potatoes
Instructions: In a small mixing bowl, combine cumin, turmeric, coriander, cinnamon, cardamom, cayenne pepper, and minced garlic. Stir well, then set aside.
In a large nonstick skillet, heat the coconut oil over medium heat. Add chicken drumsticks to the hot oil and cook for 5-6 minutes. Remove cooked drumsticks from the skillet and transfer to a 4-6-quart slow cooker.
Add sliced onions to the skillet and sauté, stirring occasionally, for 3-4 minutes or until onion is lightly browned. Stir in the spice mixture and cook for a further 30 seconds, stirring constantly. Turn off the heat.
Pour in the beef broth, then stir in ginger and sea salt. Pour the entire mixture over the chicken drumsticks in the slow cooker. Close the pot and cook on low-heat setting for 3 hours, then open the lid and stir in dried apricots and cubed potatoes.
Close the cooker and cook for a further 3 hours. Turn the slow cooker and open the lid. Stir the chicken mixture well before serving. Sprinkle with chopped fresh cilantro and serve. Enjoy!

- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin

Step 1
Pat chicken drumsticks dry with paper towels.
Step 2
In a small mixing bowl, combine paprika, garlic powder, cumin, ginger, cinnamon, coriander, saffron, sea salt, and black pepper. Stir well, then rub chicken drumsticks with the spice mixture.
Step 3
Heat the oil in an electric pressure cooker turned to the sauté function. Add the seasoned chicken and brown for about 10-15 minutes.
Step 4
Pour in the beef broth. Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.
Step 5
Open the pressure cooker and unlock the lid. Using tongs, transfer cooked chicken drumsticks to a serving plate. Close with aluminum foil and keep warm. Leave the juices rendered from the cooking process in the pan.
Step 6
In a small mixing bowl, combine the honey, molasses, lemon juice, and zest. Mix well. Pour the honey-lemon mixture into the pot. Mix well with cooking juices. Cook, uncovered, whisking occasionally, until the liquid has reduced to a thick sauce, for about 10 minutes.
Step 7
Pour the sauce over the cooked chicken. Serve garnished with toasted sesame seeds and chopped fresh scallions.
