Instant Pot Corned Beef Hash Recipe

Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, peeled and chopped
  • 1 pound (480 g) deli corned beef, diced
  • 2 teaspoons minced garlic
  • 1 pound (480 g) yellow potatoes, peeled and diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup (125 ml) chiken broth
  • chopped fresh parsley, for garnish

Method

Step 1

Melt the butter in a 6-quart (6 L) electric instant pot turned to the browning function. Add chopped onion and cook, stirring often, until softened, for about 3 minutes. Add corned beef and garlic. Continue cooking and stirring for a further 2 minutes.

Step 2

Stir in potatoes, thyme, celery seeds, and cayenne pepper. Sprinkle chicken broth over.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the machine timer to cook for 15 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Switch the cooker to the browning function. Using the back of a wooden spoon, lightly press the mixture down, (do not mash the potatoes!)

Step 5

Cook without stirring until the mixture is browned, for about 5 minutes. Sprinkle with chopped parsley. Serve hot.
