Ingredients
- 1/2 pound (120 g) mild Italian sausage link, casing removed
- 1 pound (480 g) ground beef
- 1 tablespoon olive oil
- 1 cup finley chopped yellow onion
- 1 tablespoon minced garlic
- 4 cups (1 L) low-sodium chicken broth
- 24 oz (720 ml) marinara sauce
- 8 lasagna noodles, broken into pieces
- 1/2 teapoon salt
- 1/2 teaspoon freshly ground black pepper
- 6 teaspoons grated Parmesan cheese
Method
Step 1
In an electric instant pot turned to saute mode, cook sausages, and ground beef, stirring occasionally, until browned. Drain and discard grease. Set browned meat aside. Add the olive oil and make sure the pot is evenly coated by stirring it a bit. Add onion and cook, stirring occasionally, until soft, but not brown, for about 5 minutes. Stir in minced garlic and continue cooking for a further 1 minute.
Step 2
Pour in the chicken broth. Using a wooden spatula, deglaze the pot, scraping up all brown bits from the bottom of the cooker. Pour in marinara sauce. Stir in the meat mixture and season with salt and black pepper. Mix well. Add lasagna noodles. Make sure they are completely submerged in sauce.
Step 3
Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 3 minutes.
Step 4
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Adjust seasoning, if necessary. Ladle the lasagna soup into soup bowls. Top each bowl with 1 teaspoon of grated Parmesan cheese. Serve hot.
