Instructions: In a 6-quart (6 l0 stove top pressure cooker, melt the bacon fat over medium heat. Add half of the pork chops and cook until browned, turning once, for about 5 minutes. Remove cooked pork from the pot and transfer to a large bowl. Brown the remaining pork and transfer them to the same bowl.

Stir the carrots and garlic into the pot, and cook, stirring constantly, for 1 minute. Pour in the soy sauce, maple syrup, and chicken broth, stirring well to dissolve the maple syrup and scraping up any browned bits on the bottom of the pressure cooker. Season to taste with black pepper and stir well.

Return cooked pork shoulder chops with any accumulated juices to the pot. Stir well to coat them with the sauce. Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set a timer to cook for 25 minutes.

Unlock and open the pressure cooker, using the Natural Release method. Transfer cooked pork chops with vegetables to a large serving bowl. Skim the fat from the sauce. Pour skimmed sauce over the cooked pork. Serve immediately.
