Pressure Cooker Pork Shoulder with Soy Sauce, Maple Syrup, and Carrots Recipe
Makes 4-6 servings
Ingredients: 1 tablespoon (15 ml) bacon fat, 3 pounds (1.44 kg) bone-in pork shoulder chops, 6 medium carrots, peeled, 3 medium garlic cloves, peeled, 1/3 cup (80 ml) each: soy sauce, maple syrup, and low-sodium fat-free chicken broth, 1/2 teaspoon freshly ground black pepper
Instructions: In 6-quart (6 l0 stove top pressure cooker, melt the bacon fat over medium heat. Add half of the pork chops and cook until browned, turning once, for about 5 minutes. Remove cooked pork from the pot and transfer to a large bowl. Brown the remaining pork and transfer them to the same bowl.
Stir the carrots and garlic into the pot, cook, stirring constantly, for 1 minute. Pour in the soy sauce, maple syrup, and chicken broth, stirring well to dissolve the maple syrup and scraping up any browned bits on the bottom of pressure cooker. Season to taste with black pepper and stir well.
Return cooked pork shoulder chops with any accumulated juices to the pot. Stir well to coat them with the sauce. Close pressure cooker and lock the lid. Set burner heat to high pressure. When cooker reaches high pressure, reduce heat to low. Set timer to cook for 25 minutes.
Unlock and open pressure cooker, using Natural Release method. Transfer cooked pork chops with vegetables to a large serving bowl. Skim the fat from sauce. Pour skimmed sauce over cooked pork. Serve immediately.

Ingredients
- 5 pounds (2.4 kg) boneless pork shoulder, cut into chunks
- 1 tablespoon sea salt
- 1 teaspoon smoked paprika
- 1 cup (250 ml) water
- 1 green cabbage, thinly sliced
Method
Step 1
In a small mixing bowl, combine sea salt and smoked paprika. Mix well. Rub the pork chunks with paprika mixture.
Step 2
Place seasoned pork in the pot and pour in water.
Step 3
Close pressure cooker and lock the lid. Set burner heat to high pressure. When cooker reaches high pressure, reduce heat to low. Set timer to cook for 90 minutes.
Step 4
Open pressure cooker, using Natural Release method. Remove cooked pork and transfer to a large bowl. keep warm
Step 5
Add sliced green cabbage to juices in the pot. Stir well to coat. Cover pressure cooker and set timer to cook for 3 minutes.
Step 6
Open pressure cooker, using Natural Release method. Stir cabbage mixture well and serve with cooked pork.
