Instant pot spinach-stuffed chicken recipe. Spinach and cheese-stuffed chicken breasts cooked in an electric instant pot. Very easy and delicious. You may also like Lemon-Garlic Chicken Thighs, another yummy chicken recipe cooked in a pressure cooker.
Instant Pot Spinach-Stuffed Chicken Recipe
Ingredients
- 4 boneless and skinless chicken breasts
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 cup chopped fresh spinach
- 1 cup ricotta cheese
- 1/2 cup shredded Mozzarella cheese
- 1/2 teaspoon salt
- 1 cup (250 ml) water
- 2 tablespoons olive oil
Method
Step 1
In a large mixing bowl, combine ricotta cheese, shredded Mozzarella, spinach, and salt. Mix well and set aside.
Step 2
In a small mixing bowl, combine the paprika, 1/2 teaspoon salt, garlic and onion powders. Stir well, then rube the dry mixture onto chicken breasts evenly.
Step 3
Butterfly spiced chicken. (chicken breasts should be about 1/4 inch thick) Spread the cheese and spinach mixture evenly on one side of chicken and fold over. Secure with strings.
Step 4
Heat the olive oil in an electric instant pot turned to the sauté function. Working in batches, brown stuffed chicken on both sides.
Step 5
Remove browned chicken from the pot and set aside.
Step 6
Deglaze the cooker by scraping. Pour in 1 cup (250 ml) water. Place a trivet inside the instant pot, then arrange chicken breasts on it.
Step 7
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 15 minutes
Step 8
Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Remove cooked chicken breasts from the cooker and transfer to a serving plate. Serve hot.
