Fresh herbs, finely chopped sauteed mushrooms, slices of skinned tomato, sauteed onion, chopped bacon, grated cheese,
and asparagus are but a few possible additions, without taking into account the host of suitable sauces ready and waiting to be used- a creamy Bechamel, to which one may add flavorsome tidbits or tasty sauce made from chicken stock.
Many egg dishes may be made beforehand and heated later. To the busy homemaker or the working cook, they should be invaluable. An egg dish carefully prepared should have a kind of elegance which sets it apart from any other type of food.
The egg provides the source of food for the developing chicken embryo and contains the essential food nutrients. Protein, water, and mineral salts are obtained from the yolk and the white, and fats and vitamins from the yolk only.
Deviled Egg Variation:
Stir one of ingredients showing below to egg-yolk mixture.
Bacon:
Add 2Β½ tablespoons crumbled, crisp-fried bacon.
Mexican Style:
Increase salt to 1/2 teaspoon, then add 1/3 cup (80 ml) drained, chopped tomatoes and 1 teaspoon chili powder.
Shrimp Salad:
Add 2 tablespoons chopped cooked shrimp and 2 tablespoons minced fresh celery.
Cucumber-Dill:
Add 1/4 cup minced fresh cucumber, 1 teaspoon dillweed and 1 teaspoon cider vinegar.
Ham and Olive:
Use 2 tablespoons mayonnaise in egg yolk mixture and omit salt, then add one 2ΒΌ oz (65 g) can deviled ham and 3 tablespoons chopped ripe olives.
Tuna:
Add 3 tablespoons flaked tuna and 2 teaspoons freshly squeezed lemon juice.
Pizza:
Use 2 tablespoons mayonnaise, then add 1 teaspoon chopped fresh oregano leaves, 1/8 teaspoon garlic powder, and 2 tablespoons ketchup.
Anchovy:
Add half of 2 oz (60 ml) can anchovies, minced.
Radish:
Add 3 tablespoons minced radishes.
Capers:
Add 2 tablespoons minced capers.
Olives:
Add 6 pimento-stuffed olives, minced, and 2 tablespoons prepared mustard.
Old Fashioned Deviled Eggs Recipe
Ingredients
- 6 hard-cooked eggs
- 1/4 cup (60 ml) mayonnaise
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- dash of curry powder (optional)
Method
Step 1
Shell hard-boiled eggs. Using a sharp knife, slice them in half lengthwise.
Step 2
Gently remove egg yolks abd transfer into a small bowl. Finely mash yolks, using a fork.
Step 3
Stir in mayonnaise and seasoning. Mix until smooth.
Step 4
Spoon yolk mixture into egg white center. Sprinkle with curry powder if desired. Wrap stuffed eggs with a plastic wrap and refrigerate until you are ready to serve.
