Oven baked chili chicken in breadcrumbs. Spicy chicken fillets in breadcrumbs cooked in a halogen (turbo) oven. This is a really delicious dish, made all the better by marinating for at least 1 hour, before adding breadcrumbs. Oven Baked  Chili Chicken in Breadcrumbs

Ingredients

  • 4 skinless chicken fillets
  • 2 tableapoons olive oil
  • 2-3 tablespoons vermouth
  • 2-3 cloves garlic, peeled
  • 1 red chilli,seeded
  • freshly squeezed juice of 1 lemon
  • sea salt and freshly ground black pepper
  • 3 oz (90 g) fresh breadcrumbs
  • pinch of dried thyme
  • pinch of cayenne pepper
  • 3 oz (90g ) greated Parmesan cheese

Method

Step 1

Using a wooden kitchen mallet, flatten your chicken fillets. Get them as thin as possible.

Step 2

In a food processor, combine olive oil, vermouth, garlic, red chili, lemon juice, and seasoning. Process until smooth. Pour wine mixture over chicken, then cover with aluminum foil and refrigerate for at least 2 hours.

Step 3

Remove marinated chicken from refrigerator. In a mixing bowl, combine remaining ingredients and mix well.

Step 4

Sprinkle breadcrumbs mixture over marinated chicken fillets, pressing down well.

Step 5

Preheat halogen (turbo) oven to 400 F (200 C). Place chicken fillets on high rack. Bake for 15-20 minutes or until chicken fillets are tender.
