Oven baked chili chicken in breadcrumbs. Spicy chicken fillets in breadcrumbs cooked in a halogen (turbo) oven. This is a really delicious dish, made all the better by marinating for at least 1 hour, before adding breadcrumbs.
- 4 skinless chicken fillets
- 2 tableapoons olive oil
- 2-3 tablespoons vermouth
- 2-3 cloves garlic,peeled
- 1 red chilli,seeded
- freshly squeezed juice of 1 lemon
- sea salt and freshly ground black pepper
- 3 oz (90 g) fresh breadcrumbs
- pinch of dried thyme
- pinch of cayenne pepper
- 3 oz (90g ) greated Parmesan cheese
Using a wooden kitchen mallet,flatten your chicken fillets. Get them as thin as possible.
In a food processor,combine olive oil,vermouth,garlic,red chilli,lemon juice and seasoning. Process until smooth. Pour wine mixture over chicken,then cover with aluminum foil and refrigerate for at least 2 hours.
Remove marinated chicken from refrigerator. In a mixing bowl,combine remaining ingredients and mix well.
Sprinkle breadcrumbs mixture over marinated chicken fillets,pressing down well.
Preheat halogen (turbo) oven to 400 F (200 C). Place chicken fillets on high rack. bake for 15-20 minutes or until chicken fillets are tender.
