Oven Baked Chinese Pork Belly

Ingredients

  • 1 piece belly pork,skin on
  • 6 tablespoons salt
  • 4 tablespoons freshly ground black pepper
  • 4 tablespoons five spice powder
  • 1 tablespoon baking soda
  • 4 tablespoons water

Method

Step 1

In a small mixing bowl, combine baking soda and water. Stir well until the soda is dissolved. Set aside.

Step 2

Boil belly pork in salted water for 8-10 minutes. Set aside and chill for 1 hour.

Step 3

Using a fork, prick the skin all over and evenly. Brush a couple of layers of the soda mixture over. After 5 minutes, rub 2 tablespoons of salt on the skin and 3 tablespoons around the meat. Rub black pepper and five spice over belly pork only.

Step 4

Preheat your oven to 500 F (250 C). Arrange seasoned belly pork in- leave both top and bottom heat elements on. Cook for 20 minutes, then reduce heat to 360 F (180 C) and cook for a further 25 minutes.

Step 5

Remove belly pork from the oven, during the cooking, every 15 minutes two times. Prick the skin to aerate then replace it in the oven. The temperature inside should be 300 F (150 C) before it is done.

Step 6

Remove oven-cooked belly pork from the oven and let it cool. Slice and serve.
