Oven baked curried chicken drumsticks. Chicken drumsticks with vegetables and spices baked in a halogen (turbo) oven.

Ingredients

  • 2 tablespoons chilli
  • olive oil
  • freshly squeezed juice of 1/2 lemon
  • zest of 1/2 lemon
  • 1 samll yellow onion,peeled
  • 1 chilli finely chopped
  • 3 cloves garlic,peeled
  • ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon groud cumin
  • 2 teaspoons curry powder
  • 3 tomatoes
  • handful of coriander
  • 3 tablespoons water
  • sea salt and freshly ground black pepper
  • 6-8 chicken drumsticks

Method

Step 1

In a food processor,combine all ingredients,except chicken drumsticks. Process to form a paste.

Step 2

Arrange chicken drumsticks in a greased ovenproof dish. Pour over sauce,cover with aluminum foil and refrigerate overnight.

Step 3

Remove marinated chicken drumsticks form refrigerator. Place on a medium rack with aluminum foil still intact.

Step 4

Set oven temperature to 400 F (200 C). Cook in preheated oven for 20 minutes.

Step 5

Remove aluminum foil and add a few more tablespoons of water if sauce appears to dry. Coo for a further 10-15 minutes or until chicken drumsticks are tender.

Step 6

Remove baked curry chicken drumsticks from halogen (turbo) oven. Transfer to serving platter. Serve over cooked rice.
