Oven baked easy English muffins recipe. Famous English muffins baked in the oven, an excellent choice for any breakfast! This recipe is adapted from http://www.foodnetwork.com/ To bake English muffins, you need to use the following ingredients:
4Β½ cups bread flour, plus extra for kneading, 3 tablespoons granulated sugar, 1ΒΌ oz (37 g) package instant yeast, 2 teaspoons salt, 1 large egg, beaten, 1ΒΎ cups (330 ml) whole milk, 2Β½ tablespoons olive oil, plus some extra,
coarse cornmeal, nonstick cooking spray, and any garnishes (see recipe below)
Basic English Muffins Recipe
Instructions: In a mixing bowl, combine bread flour, sugar, yeast, and salt. Mix, using a stand mixer. Add beaten egg but do not stir it in. In a saucepan, combine milk and coconut oil. Heat over medium-high heat until the thermometer indicates 110ΒΊ F.
Pour the hot milk mixture into the flour mixture. Using a dough hook, mix on medium speed until smooth and the dough starts to pull away. Knead the dough. Transfer dough onto a floured surface. Knead until smooth.
Shape into a ball and transfer into a large bowl, oiled with coconut oil. Brush the top of the dough with extra coconut oil. Wrap with plastic wrap and set aside for 1-2 hours or until doubled in size.
Gently form the muffins. Sprinkle two baking sheets with coarse cornmeal and set aside. Divide raised dough into 16 equal parts. Roll each piece into a ball and flatten it into a 3-inch (7.5 cm) disk. Transfer to baking sheets.
Heat a cast-iron skillet over medium heat. Grease a skillet with cooking spray and sprinkle with cornmeal. Cook muffins, working in batches, until they are golden brown, for 5-10 minutes per side.
Remove cooked muffins from the skillet and transfer to a serving bowl. Serve with garnishes.
Garnishes for Muffins:
Sweet Peppers: Spread 1/2 teaspoon of chili sauce on each baked muffin. Garnish with blanched green bell pepper slices and a few drops of famous Worcestershire sauce. Top with grated Mozzarella cheese.
Onions: Sprinkle each muffin with grated cheese. Add sliced red and yellow onions, lightly sautΓ©ed in unsalted butter. Top with small pickles.
Ham: Top each muffin with a slice of Provolone cheese and a slice of cooked ham. Place canned asparagus over cheese and ham. Decorate with diced fresh tomatoes. Season with salt and freshly ground black pepper. Sprinkle with grated cheese (use any).
Shrimp: Place on top of each muffin thinly sliced, blanched leek whites. Add cooked baby shrimp. Sprinkle with chopped fresh herbs, such as oregano, tarragon, and parsley. Lightly season with salt and black pepper. Sprinkle with grated Parmesan cheese.

Step 1
Preheat oven to 400 F (200 C).
Step 2
Slice muffins in half and toast in the oven for 4 minutes.
Step 3
Turn off oven. Remove toasted muffin halves and baste with butter. Garnish with any garnishes above. Put a few drops of olive oil over mixture. bake for a further 10-12 minutes.
