Basic English Muffins Recipe
Instructions: In a mixing bowl, combine bread flour, sugar, yeast, and salt. Mix, using a stand mixer. Add beaten egg but do not stir it in. In a saucepan, combine milk and coconut oil. Heat over medium-high heat until the thermometer indicates 110º F.
Pour the hot milk mixture into the flour mixture. Using a dough hook, mix on medium speed until smooth and the dough starts to pull away. Knead the dough. Transfer dough onto a floured surface. Knead until smooth.
Shape into a ball and transfer into a large bowl, oiled with coconut oil. Brush the top of the dough with extra coconut oil. Wrap with plastic wrap and set aside for 1-2 hours or until doubled in size.
Gently form the muffins. Sprinkle two baking sheets with coarse cornmeal and set aside. Divide raised dough into 16 equal parts. Roll each piece into a ball and flatten it into a 3-inch (7.5 cm) disk. Transfer to baking sheets.
Heat a cast-iron skillet over medium heat. Grease a skillet with cooking spray and sprinkle with cornmeal. Cook muffins, working in batches, until they are golden brown, for 5-10 minutes per side.
Remove cooked muffins from the skillet and transfer to a serving bowl. Serve with garnishes.
