Fish Cutlets Recipe (Indian Cuisine)

makes 4 servings

Ingredients:1/2 pound (240 g) skinless white fish fillets, such as cod or haddock,  1 cup (250 ml) soy granules, 1 2-inch (2.5 cm0 stick ginger, peeled and finely chopped, 2 small green chilies, seeded and finely chopped, 1 medium potato, peeled, boiled and mashed, 1 tablespoon (15 ml0 cooking oil, a pinch of nutmeg powder, 2 teaspoons (10 ml) chopped fresh coriander leaves, 1 egg white, salt to taste

Instructions: In a large nonstick pan, heat 1 tablespoon (15 ml) cooking oil over medium-high heat. Add chopped ginger and saute, stirring occasionally, until lightly golden. add fish fillets and cook, turning occasionally, until evenly cooked on both sides. Add finely chopped green chilies, mix well, then remove the fish mixture from the pan and transfer to a large bowl.

Add the remaining ingredients to the bowl and mix well.

Divide the fish mixture into equal portions. Using wet hands, shape them into cutlets. Working in batches, fry fish cutlets, flipping once, until golden brown. Remove fried fish cutlets from the pan and pat dry with paper towels.

Transfer to a serving plate. Serve hot.

Oven Baked Fish Cakes Recipe

Ingredients

  • 1 pound (480 g) white fish fillets, such as haddock or cod
  • 1 large egg, lightly beaten
  • 1 oz (30 g) tapioca flour
  • 2 tablespoons minced fresh parsley
  • 1/2 tablespoon chopped red chili pepper
  • 2 spring onions, chopped
  • 1/2 tablespoon freshly squeezed lemon juice
  • 2 garlic cloves, peeled and minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Method

Step 1

Preheat the oven to 350 F (175 C).

Step 2

Pat the fish fillets dry with paper towels, then finely chop.

Step 3

In a large bowl, combine chopped fish fillets, beaten egg, tapioca flour, parsley, chili, spring onions, lemon juice, grated ginger, garlic, olive oil, and seasoning. Using your hands, combine well. Shape the mixture into patties.

Step 4

Line a baking sheet with a parchment paper. Slightly flatten the patties and bake in preheated oven for 20-25 minutes or until golden brown and cooked through.

Step 5

Remove baked fish cutlets from the oven and transfer to a serving plate. Serve with vegetables.
