Oven Baked Fruited Chicken Recipe
Makes 2 servings
Ingredients: 1 pound (480 g) skinless chicken parts (drumsticks and thighs), 1/2 banana, peeled and cut into thick slices, 1/4 teaspoon salt, 1/3 cup (80 ml) unfermented apple cider, 1/2 cup (125 ml) applesauce (no sugar added), 1/4 cup (60 ml) plain unflavored yogurt, dash of ground nutmeg
Instructions: Preheat the oven to 350º F (175º C). In a shallow 1½ -quart (1½ L) ovenproof casserole, combine chicken parts and banana. Sprinkle with salt and drizzle with apple cider vinegar. Cover and bake in preheated oven for about 35 minutes or until chicken parts are tender.
Transfer pan juices and banana slices to a food processor, leaving the chicken in casserole. Add applesauce, yogurt, and ground nutmeg to banana mixture. Process until smooth. Pour banana mixture over chicken. Cover and broil until chicken parts are golden brown.
Oven Baked Yogurt-Glazed Chicken Recipe
Makes 2 servings
Ingredients: 2 tablespoons plain unflavored yogurt, 1 teaspoon brown sugar, 1 teaspoon Worcestershire sauce, 1 garlic clove, peeled and minced, salt and freshly ground black pepper, dash of hot sauce, 10 oz (300 g) skinless and boneless chicken breasts
Instructions: Preheat the oven to 350º F (175ºC). In a small mixing bowl, combine all ingredients, except chicken breasts. Stir well. Grease a shallow baking pan with nonstick cooking spray. Arrange chicken breasts in pan. Top with half of yogurt mixture.
Cover and bake in preheated oven for about 20 minutes or until chicken breasts are tender. Remove pan from the oven. Spread remaining yogurt mixture over chicken pieces. Switch oven control to broil function. Broil chicken until lightly browned.
Turn off the oven. Transfer baked chicken to serving platter. Pour pan juices over chicken. Serve hot.
Oven Baked Honey-Lime Chicken Recipe
- 1 ½ pounds (720 g) chicken drumsticks
- dash of garlic powder
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons prepared Dijon-style mustard
- 2 teaspoons clear honey
Preheat the oven to 350 F (175 C).
Grease shallow baking pan with nonstick cooking spray. Arrange chicken drumstick on the pan. Sprinkle with garlic powder and salt.
Bake in preheated oven for about 30 minutes or until fork pierces chicken easily.
In a small saucepan, combine lime juice, mustard, and honey. Stir and heat.
Switch oven control to broil function. Broil chicken drumsticks until lightly browned, for about 5 minutes.
Remove from the oven. Serve hot.
