Oven baked sausage in brioche.This delicious recipe belongs to French cuisine.An excellent choice for party!
- 1 pound (480 g) sausage
- Bouquet garni
- 1 large onion,peeled
- 1/2 teaspoon salt
- 1½ teaspoons dried yeast
- 1 tablespoon superfine sugar
- 2 eggs,beaten
- 2 oz (60 g) butter,melted
- 1 egg yolk
In a large saucepan,combine sausage,bouquet garni and onion. Cover with cold water.
Bring to the boil and simmer for 1½ hours.
In a mixing bowl,combine flour and salt. Sprinkle yeast on to the water,add pinch of caster sugar and stir well. Leave in a warm place until frothy. Add to flour mixture remaining sugar.
Add beaten eggs and butter to flour mixture and mix to a soft dough. Knead until glossy and wrap in oiled polythene. Leave dough in a warm place to rise.
Meanwhile,drain cooked sausage,set aside and allow to cool completely. Remove the skin.
Preheat the oven to 425 F (220 C).
Roll out dough to a rectangle large enough to enclose the sausage. Place cooked sausage in the center and fold dough round it,pinching edges to seal. Place join down,on a baking sheet. Leave to prove for 15 minutes.
Brush dough with egg yolk. Bake in preheated oven for 25-30 minutes until crisp and golden.
Serve sausage in brioche hot,cut into slices.
