Oven roasted pear and fig salad with feta cheese. Delicious vegetarian salad with roasted fruits, cheese, and nuts. Excellent side dish for Christmas Party!

Ingredients

  • 2 ripe pears,cored and cut into wedges
  • 8-10 figs, halved
  • 1 cup (250 g) fresh lettuce leaves
  • 1/4 cup (60 g) pitted dried cherries
  • 1/4 cup chopped walnuts
  • 2 oz (60 g) crumbled feta cheese

Method

Step 1

Preheat oven to 360 F(180 C).

Step 2

Arrange the pear wedges and fig halves on a baking sheet. Bake fruits for 30 minutes. Remove baked fruits from the oven and set aside.

Step 3

Layer chopped walnuts in a baking tray. Roast for 5-6 minutes.

Step 4

In a salad bowl,tear fresh lettuce leaves then add roasted fruits and dried cherries. Stir well and sprinkle chopped walnuts and crumbled feta cheese over top.

Step 5

Pour over honey mustard dressing and serve immediately.

Step 6

FOR HONEY MUSTARD DRESSING: 1 cup (250 g) yogurt 1/4 cup (60 g) clear honey 2 tablespoons mustard sauce salt and freshly ground black pepper to taste 2 tablespoons freshly squeezed lemon juice

Step 7

In a small bowl,whisk yogurt until smooth. Add remaining ingredients and sir well. Pour mixture over salad.
