Oven roasted vegetables. Vegetable mix roasted in a halogen (turbo) oven. This is an excellent vegetarian recipe!

Ingredients

  • 1 pound (480 g) of vegetable mixture (sweet potatoes,eggplant,zucchini,etc)
  • 1 teaspoon vegetable oil
  • 1 clove garlic,minced
  • salt and freshly ground black pepper

Method

Step 1

Combine vegetable oil, garlic salt, and black pepper in a pot with a lid. Add vegetable chunks. Cover a lid. Stir vegetables vigorously in the pot.

Step 2

Preheat the turbo oven to 460°F (240°C). Arrange the vegetable mixture directly on the grilling rack of the turbo oven. Roast for 20-25 minutes.
