How to Prepare Blue Cheese Sauce for Pasta
Makes 3 cups (750 ml)
Ingredients:4 cups (1 L) heavy (double) cream, 3-4 oz (90-120 g) crumbled Gorgonzola cheese, 3 tablespoons (45 ml) grated Parmesan cheese, 3/4 teaspoon each: (4 ml) kosher salt and freshly ground black pepper, 3 tablespoons (45 ml) minced fresh parsley
Instructions: Heat a large saucepan over medium-high heat. Add the heavy cream and bring to a full boil, then continue boiling for 45-50 minutes, stirring occasionally.
Remove boiled heavy cream from the heat and set aside. Add crumbled Gorgonzola, grated Parmesan cheese, minced fresh parsley, salt, and black pepper. Stir well until the cheeses melt.
Serve blue cheese sauce warm over the cooked Italian pasta.
If you would like to prepare creamy and buttery sauce, try to use Cambozola cheese. Roquefort cheese is also a good example of creamy and crumbly blue cheese. And, finally, to get a creamy and firm sauce, use Stilton cheese.

Simple Spaghetti with Blue Cheese sauce Recipe
Ingredients: 1/2 pound (40 g) uncooked Italian spaghetti, 2 tablespoons (30 ml) unsalted butter, 1 pound (480 g) crumbled blue cheese, 1/4 cup chopped fresh parsley
Instructions: Bring a large pot of salted water to a boil over medium-high heat. Add spaghetti and cook according to package instructions. Remove cooked spaghetti from the heat, then drain, reserving 1/2 cup (125 ml) of cooking liquid.
Return the pot to heat, reduce heat to low, and add the butter. When the butter has melted, add cooked spaghetti back to the pot and stir well to coat. Slowly add the blue cheese, stirring the spaghetti so the cheese melts.
Drizzle a little of the reserved cooking liquid over the spaghetti. Once the blue cheese has mostly melted, stir in chopped fresh parsley. Season with salt to taste. Serve immediately.

- 3 oz (90 g) arugula
- 1 tablespoon butter, melted
- 1 cup (250 ml) milk
- 1/2 cup crumbled blue cheese
- 1/2 cup toasted walnuts, coarsely chopped
- salt and freshly ground black pepper,to taste

Step 1
Cook pasta according to cooking instructions. Drain, reserving 1/4 cup of water.
Step 2
In a large saucepan, combine melted butter, cheese, and milk. Whisk together until smooth.
Step 3
Add salt and black pepper. Add cooked pasta, arugula and reserved water to blue cheese mixture. Sprinkle with chopped walnuts and serve immediately.
