Pressure Cooker Spicy Pork Shoulder and Peanut Stew Recipe
Makes 4 servings
Ingredients: 14 oz (420 ml) can diced tomatoes, undrained,Β 1/2 cup (125 ml) peanut butter, 1 tablespoon (15 ml) fresh oregano leaves, chopped, 1/4 teaspoon each: cayenne pepper, grated nutmeg, salt, 2 tablespoons (30 ml) peanut oil, 2 pounds (960 g) skinless pork shoulder, trimmed and cut into 2-inch (5 cm) cubes, 1 large yellow onion, peeled, halved and thinly sliced, 1 tablespoon (15 ml) minced fresh ginger, 2 teaspoons minced garlic, 1/4 cup (60 ml) dry white wine, 6 medium carrots, peeled and cut into 2-inch (5 cm) chunks, 2 bay leaves, 2 tablespoons (30 ml) freshly squeezed lime juice
Instructions: In a medium mixing bowl, combine undrained tomatoes, peanut butter, chopped oregano, cayenne pepper, nutmeg, and salt. Whisk until the peanut butter has loosened. Set aside.
In a 6-quart (6 L) stovetop pressure cooker, heat peanut oil over medium-high heat (if you are using an electric pressure cooker, set it to browning function.) Working in batches, add cubed pork and brown on all sides, turning occasionally, for about 5-6 minutes per batch. Transfer browned meat to a large bowl, then set aside and keep warm.
Add sliced yellow onion and ginger to the pot. Cook, stirring until softened, for about 4-5 minutes. Stir in minced garlic and cook for a further 10 seconds. Pour in dry white wine, scraping up any browned bits in the bottom of the pot.
Stir in the tomato mixture, then return the pork to the pot along with any accumulated juices, carrots, and bay leaves. Stir well.
Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set the timer to cook for 25 minutes.
Open pressure cooker, using Normal Release method. Discard the bay leaves. Stir in lime juice. Transfer pork stew to a serving bowl. Serve hot. Still looking for pressure cooker recipes?

- 3 tablespoons (45 ml) sweet paprika
- 1Β½ teaspoons (10 ml) all-purpose flour
- 1 teaspoon (7 ml) dried dill
- 1 teaspoon (7 ml) dried thyme
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) freshly ground black pepper
- 2 tablespoons (30 ml) olive oil
- 2Β½ pounds (1.44 kg) boneless and skinless pork shoulder, cut into cubes
- 1 medium yellow onion, peeled and chopped
- 1 pound (480 g) carrots, peeled and chunked
Method
Step 1
In a large mixing bowl, combine chicken broth, paprika, all-purpose flour, dill thyme, and seasoning. Whisk until the flour dissolves. Set aside.
Step 2
In a 6-quart (6L) stove top pressure cooker, heat olive oil over medium-high heat (if you are using an electric pressure cooker, set to the browning function). Add cubed pork and brown on all sides, turning occasionally, for about 5-6 minutes per batch. Transfer cooked meat to a large bowl. Set aside and keep warm.
Step 3
Add chopped yellow onion to the pot. Cook, stirring, until softened, for about 4-5 minutes. Stir in carrots. Pour in reserved broth mixture and stir well. Return the meat and any accumulated juices to the cooker, then stir well to coat the pieces in the sauce.
Step 4
Close pressure cooker and lock the lid. Set burner heat to high pressure. (for electric pressure cooker set the machine to cook at high pressure) When cooker reaches high pressure, reduce heat to low. Set timer to cook for 25 minutes. (for electric pressure cooker-set timer to cook for 30 minutes)
Step 5
Open pressure cooker, using the Natural Release method. Stir well pork stew. Serve hot over cooked pasta.
