Pressure Cooker Korean Beef Recipe

Ingredients

  • 1/2 cup (125 ml) beef broth
  • 1/3 cup (80 ml) reduced sodium soy sauce
  • 1/3 cup brown sugar
  • 1 large yellow onion, peeled and chopped
  • 4 cloves garlic, peeled and minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon grated ginger
  • 1 teaspoon Sriracha sauce
  • 1/2 teaspoon ground white pepper
  • 3 pounds (1.44 kg) beef chuck roast, cut into strips
  • 3 tablespoons cornstarch
  • 2 green onions, thinly sliced

Method

Step 1

In a large mixing bowl, combine beef broth, soy sauce, sugar, garlic, onion, ginger, sesame oil, vinegar, Sriracha sauce, and white pepper. Whisk well.

Step 2

Place stripped beef into a 6-quart (6 L) electric pressure cooker. Pour in the broth mixture and mix well to combine.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 15 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.

Step 5

In a small mixing bowl, combine cornstarch and 3 tablespoons of water. Mix until cornstarch is dissolved completely. Set aside.

Step 6

Switch the pressure cooker to saute mode. Stir in cornstarch mixture. Cook, stirring frequently, until sauce is thickened, for a further 2-3 minutes.

Step 7

Turn off the cooker. Remove cooked beef from the pot and transfer it to a serving plate. Pour the sauce over. Sprinkle with chopped green onions.
