Pressure Cooker Pork Shoulder Recipe

makes 8 servings

So, to cook pork shoulder with vegetables and bacon, you need to use the following ingredients (a short version of this recipe follows) :

3 bacon slices, 5 pounds (2.4 kg) bone-in pork shoulder roast, 1½ tablespoons (23 ml) Red Alaea Hawaiian Coarse Sea Salt, 5 large garlic cloves, 1 cup (250 ml) water, 1 cabbage

Instructions: Cook bacon slices in an electric pressure cooker turned to the sauté mode until the bacon starts sizzling.

Slice the pork roast into 3 equal pieces. Peel the garlic cloves. Using a sharp knife, make a few slits in each piece of pork. Tuck in peeled garlic cloves. Season the stuffed pork pieces with Hawaiian coarse sea salt.

Place garlic-stuffed and seasoned pork pieces in a single layer on the top of cooked bacon in the pressure cooker. Pour in the water. Cover the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 90 minutes.

Turn the electric pressure cooker and carefully open the lid. Using tongs, remove cooked pork from the pot, reserving the cooking liquid. Transfer pork to a large bowl. Keep warm.

Core the cabbage head and slice it into 6 wedges. Add wedges to the hot cooking liquid. Cover the pressure cooker and cook the cabbage under high pressure for 3-5 minutes or until the cabbage is cooked through.

Meanwhile, shred the pork, using two forks. Divide the shredded meat into 6 serving bowls. Stir cooked cabbage wedges. Serve hot.
