Ingredients
- 2 tablespoons fresh rosemary leaves
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh oregano leaves
- 1 teaspoon fennel seeds
- 1 teaspoon salt
- 2 tablespoons olive oil, plus extra for brushing the ribs
- 1 tablespoon minced garlic
- 1 teapoon freshly ground black pepper
- 4 pounds (2 kg) baby back ribs, cut into sections
- 1/3 cup (80 ml) red wine vinegar

Step 1
Place herbs, fennel seeds, and salt on a cutting board. Finely mince them, using a large knife.
