Roast beef with horseradish cream. Beef rib-eye roast cooked in oven and served with homemade horseradish cream.
- 1 teaspoon black peppercorns,cracked
- 3/4 teaspoon salt
- 4 pounds(1.920 kg) boneless beef rib-eye roast
- Horseradish Cream(recipe follows)
- For Horseradish Cream:
- 1/2 cup (125 ml) whipping cream
- 2 tablespoons prepared horseradish
- 1/2 teaspoon dry mustard
Preheat oven to 350°F(180°C).
Sprinkle black peppercorns and salt evenly over beef roast. Rub meat with your fingers.
Arrange rubbed roast,fat side up,on a grilling rack in roasting pan. Insert meat thermometer into center of meat.
Roast,uncovered,until desired doneness.(2 hours for medium-rare and 2½-3 hours for well done).
Horseradish Cream: In a small mixing bowl,beat whipping cream,using mixer,until soft peaks form. Add dry mustard and prepared horseradish. Mix well and serve with roasted meat.
