Fried Chicken Breasts in Horseradish White Sauce
Makes 4 servings
Ingredients: 2 large skinless and boneless chicken breasts, 1 cup (250 ml) seasoned flour, 1 large egg, beaten, 1½ cups (375 ml) breadcrumbs, 2 tablespoons (30 ml) vegetable oil, 1½ cups (375 ml) horseradish white sauce (see recipe below), salt and freshly ground black pepper
Instructions: Preheat the oven to 375º F (190º C). Dredge chicken breasts with seasoned flour, then dip into beaten eggs. Coat with breadcrumbs.
Heat vegetable oil over medium-high heat in a frying pan. When hot, add seasoned chicken breasts and cook, turning once, for about 4 minutes per side. Season with salt and black pepper. Transfer cooked chicken breasts to the preheated oven. Cook for 10-12 minutes.
Turn off the oven. Remove baked chicken and transfer to the serving plate. Pour horseradish white sauce over. Serve immediately.
Horseradish White Sauce Recipe
Ingredients: 4 tablespoons (60 ml) unsalted butter, 2 tablespoons (30 ml) chopped yellow onion, 4 tablespoons all-purpose flour, 2 cups (500 ml) hot milk, 1/4 teaspoon ground nutmeg, 2½ tablespoons horseradish, a pinch of paprika, salt and freshly ground black pepper, to taste
Instructions: In a small saucepan, heat butter over medium heat. When hot, reduce heat to low, add onion and cook, stirring occasionally, for 3 minutes. Add all-purpose flour and stir well. Cook, uncovered, for further 1 minute.
Pour in half of the hot milk (250 ml). Mix well. Add remaining 1 cup (250 ml) milk, then stir in seasoning and spices. Increase heat to medium-high and bring sauce to a boil. Reduce heat to medium-low and continue cooking for 8-10 minutes, uncovered and stirring frequently.
Mix in horseradish and simmer for further 2 minutes.
Simple Fried Chicken Breasts Recipe
Ingredients
- 4 skinless, boneless chicken breast halves, about 1¼ pounds
- salt to taste if desired
- 3 tablespoons unsalted butter
- 1/4 cup (60 ml) dry white wine
Method
Step 1
Sprinkle the chicken breast halves with salt and pepper. Heat 2 tablespoons butter in a heavy skillet large enough to hold the chicken in one layer over medium-high heat. Add the chicken and brown lightly on one side. Turn and continue cooking about 5 minutes or until cooked through.
Step 2
Pour in dry white wine and cook for a further 1-2 minutes or until wine is evaporated. Remove fried chicken from the skillet and serve hot.
