Ingredients

  • 2 tablespoons unsalted butter
  • 4 skinless and boneless chicken breasts
  • 1 large shallot, chopped
  • 1 teaspoon minced garlic
  • 1/4 cup (60 ml) peach jam
  • 1/4 cup (60 ml) chicken broth
  • 1/4 cup (60 ml) bourbon
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method

Step 1

Melt butter in the pressure cooker turned to saute mode. Add chicken breasts and brown. turning once, for about 4 minutes. Remove from the cooker and transfer to a large bowl.

Step 2

Add chopped shallot and garlic. Cook, stirring, until softened, for about 2 minutes. Stir in peach jam, chicken broth, bourbon, thyme, and seasoning. Place cooked chicken breasts into the sauce.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 14 minutes.

Step 4

Open the pressure cooker, using a Quick Release method. Using a tongs, transfer chicken breasts to a serving platter. Pour the sauce over. Serve hot.
