Simple Fried Chicken Breasts Recipe

Fried Chicken Breasts in Horseradish White Sauce

Makes 4 servings

Ingredients: 2 large skinless and boneless chicken breasts, 1 cup (250 ml) seasoned flour, 1 large egg, beaten, 1½ cups (375 ml) breadcrumbs, 2 tablespoons (30 ml) vegetable oil, 1½ cups (375 ml) horseradish white sauce (see recipe below), salt and freshly ground black pepper

Instructions: Preheat the oven to 375º F (190º C). Dredge chicken breasts with seasoned flour, then dip into beaten eggs. Coat with breadcrumbs.

Heat vegetable oil over medium-high heat in a frying pan. When hot, add seasoned chicken breasts and cook, turning once, for about 4 minutes per side. Season with salt and black pepper. Transfer cooked chicken breasts to the preheated oven. Cook for 10-12 minutes.

Turn off the oven. Remove baked chicken and transfer to the serving plate. Pour horseradish white sauce over. Serve immediately.

Horseradish White Sauce Recipe

Ingredients: 4 tablespoons (60 ml) unsalted butter, 2 tablespoons (30 ml) chopped yellow onion, 4 tablespoons all-purpose flour, 2 cups (500 ml) hot milk, 1/4 teaspoon ground nutmeg, 2½ tablespoons horseradish, a pinch of paprika, salt and freshly ground black pepper, to taste

Instructions: In a small saucepan, heat butter over medium heat. When hot, reduce heat to low, add onion and cook, stirring occasionally, for 3 minutes. Add all-purpose flour and stir well. Cook, uncovered, for further 1 minute.

Pour in half of the hot milk (250 ml). Mix well. Add remaining 1 cup (250 ml) milk, then stir in seasoning and spices. Increase heat to medium-high and bring sauce to a boil. Reduce heat to medium-low and continue cooking for 8-10 minutes, uncovered and stirring frequently.

Mix in horseradish and simmer for further 2 minutes.

Simple Fried Chicken Breasts Recipe

Ingredients

  • 4 skinless, boneless chicken breast halves, about 1¼ pounds
  • salt to taste if desired
  • 3 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup (125 ml) fresh or canned chicken broth
  • 1/2 cup (125 ml) milk
  • 1/4 cup (125 ml) heavy cream
  • 1/4 pound (120 g) blue cheese, crumbled
  • 4 rectangles or thinly sliced cooked ham, about 1/4 pound
  • 1/4 cup finely chopped onion
  • 1/4 cup (60 ml) dry white wine

Method

Step 1

Sprinkle the chicken breast halves with salt and pepper. Heat 2 tablespoons butter in a heavy skillet large enough to hold the chicken in one layer over medium-high heat. Add the chicken and brown lightly on one side. Turn and continue cooking about 5 minutes or until cooked through. Remove the pieces and keep warm.

Step 2

Meanwhile, heat the remaining 1 tablespoon butter in a saucepan and add the flour, stirring rapidly with a wire whisk. Add the broth and milk, and continue stirring rapidly. Add the cream and cook, stirring often, about 5 minutes. Add the cheese and stir until melted.

Step 3

Add the ham slices to the skillet in which the chicken pieces cooked and sauté briefly on both sides just the heat through. Transfer the slices to a heated serving dish and cover each slice with a piece of chicken breast.

Step 4

Add the onion to the skillet and cook, stirring, until wilted. Add the wine and stir to dissolve the brown particles that cling to the bottom and sides of skillet. Stir in the cheese sauce.

Step 5

Place a sieve over a small skillet and strain the sauce, stirring and pushing down with a plastic spatula to press through as much of it as possible. There should be about 1¹⁄³ cups of sauce. Pour the sauce over chicken breasts and serve hot.
