Slow Cooker Baked Potatoes

Ingredients

  • 1/4 cup (60 ml) olive oil
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Cajun seasoning
  • 4 cranks from a pepper grinder
  • 4 russet potatoes, washed and unpeeled
  • sea salt

Method

Step 1

In a mixing bowl, combine all ingredients. Mix well.

Step 2

Pat dry potatoes with a paper towel. Place them on a large piece of aluminum foil. Cut small slices on top of each potato. Brush potatoes with olive oil mixture and sprinkle with sea salt.

Step 3

Tightly wrap potatoes in aluminum foil. Place potatoes in the slow cooker. Cover the slow cooker and cook on a low-heat setting for 6-8 hours.

Step 4

Remove baked potatoes from the slow cooker. Stuff with cheese, and fried bacon. Sprinkle with chopped green onions. Serve immediately.

Step 5

P.S. Stuffing is optional, so you can serve potatoes as is.
