Slow cooker chicken cordon bleu. Cheese and ham-stuffed chicken breasts cooked in a slow cooker. Yummy! You may also like Tangy Chicken Wings, another delicious chicken recipe cooked in a crock pot (slow cooker).
Slow Cooker Chicken Cordon Bleu
Ingredients
- 1/4 cup (60 g) all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 boneless chicken breasts, lightly pounded
- 4 slices ham
- 4 slices Swiss cheese
- 2 tablespoons olive oil
- 1/2 cup (125 ml) dry white wine
- 1/2 cup (125 ml) chicken broth
- 1/2 cup (125 ml) half-and-half
- 2 tablespoons cornstarch
Method
Step 1
In a resealable food storage, combine all-purpose flour, paprika, salt, and black pepper. Shake well and set aside.
Step 2
Arrange chicken breasts on a cutting board, skin-side down. Place a slice of ham and a slice of cheese on each piece. Fold chicken up to enclose filling. Secure with a toothpick.
Step 3
Place stuffed chicken breasts in a bag with flour mixture. Shake gently to coat.
Step 4
Preheat olive oil in a large nonstick skillet. Add stuffed chicken, skin-side down and brown on all sides.
Step 5
Remove browned chicken from the skillet and transfer to the slow cooker.
Step 6
Remove skillet from the heat and add white wine. Cook, stirring, to loosen browned bits. Pour over chicken in slow cooker. Add chicken broth. Cover slow cooker and cook on low-heat setting for 2 hours.
Step 7
Using a slotted spoon, remove chicken cordon bleu from the slow cooker, reserving cooking liquid, and place on serving platter. Cover with aluminum foil to keep warm.
Step 8
In a mixing bowl, combine half-and-half and cornstarch. Add to cooking liquid. Cover slow cooker and cook on low-heat setting for a further 15 minutes or until sauce has thickened.
Step 9
Remove toothpicks from stuffed chicken. Spoon sauce around the chicken. Serve with extra sauce on side.
