Slow Cooker Chicken Parmesan

  • 4 boneless and skinless chicken breasts
  • 1/2 cup (125 g) Italian seasoned breadcrumbs
  • 1/4 cup (60 g) grated Parmesan cheese
  • 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 large egg, beaten
  • shredded mozzarella cheese
  • Marinara sauce

Step 1

Pour olive oil into a slow cooker.

Step 2

In a medium mixing bowl, combine breadcrumbs, grated Parmesan cheese, and seasoning. Mix well.

Step 3

Pour the beaten egg into the small bowl. Dip chicken breasts into beaten egg, then into breadcrumb mixture.

Step 4

Place chicken breasts in the bottom of the slow cooker. Top with 2 cups of shredded mozzarella cheese. Pour the marinara sauce over. Close the pot and cook on a low-heat setting for 5 hours, or until the chicken is done.

Step 5

Remove cooked chicken and sauce from the slow cooker. Transfer to a serving platter. Serve over the cooked pasta.
