Slow Cooker Chicken Parmesan
Ingredients
- 4 boneless and skinless chicken breasts
- 1/2 cup (125 g) Italian seasoned breadcrumbs
- 1/4 cup (60 g) grated Parmesan cheese
- 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 1 large egg, beaten
- shredded mozzarella cheese
- Marinara sauce
Method
Step 1
Pour olive oil into slow cooker.
Step 2
In a medium mixing bowl, combine breadcrumbs, grated Parmesan cheese and seasoning. Mix well.
Step 3
Pour beaten egg into the small bowl. Dip chicken breasts into beaten egg, then into breadcrumb mixture.
Step 4
Place chicken breasts in the bottom of slow cooker. Top with 2 cups of shredded mozzarella cheese. Pour marinara sauce over. Close slow cooker and cook on low-heat setting for 5 hours or until chicken is done.
Step 5
Remove cooked chicken and sauce from slow cooker. Transfer to serving platter. Serve over cooked pasta.
