Slow Cooker Chicken with Wild Rice Soup
Ingredients
- 1/2 teaspoon whole black peppercorns
- 1 pound(480 g) skinless, boneless chicken thighs, cubed
- 1/2 cup uncooked wild rice
- 1/4 cup onions, finely chopped
- 2 cans (300g each) condensed cream of potato soup
- 1 can (420 ml) chicken broth with roasted garlic
- 2 cups carrots, sliced
- 1 cup (250 ml) half-and-half
- 1 rib celery, diced
Method
Step 1
Put chicken slices in a slow cooker. Combine rice, onions, chicken broth, potato soup, celery, peppercorns, and carrots. Mix well and pour mixture over chicken.
Step 2
Cover and cook on a low-heat setting for 7-8 hours.
Step 3
Stir in half-and-half. Turn the slow cooker to a high-heat setting. Cover and cook slow cooker chicken for a further 15-30 minutes or until hot.
