Ingredients
- 6 cups (1.5 L) reduced-sodium fat-free chicken broth
- 1can (14½ oz (435 ml)) stewed tomatoes
- 1 pound (480 g) boneless and skinless chicken breasts,cubed
- 2 cups(500g) mixed fresh vegetables (broccoli florets, chopped red peppers, sliced carrots)
- 1 large yellow onion,peeled and chopped
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried majoram leaves
- 1/2 cup (125 g) uncooked long-grain rice
- salt and freshly ground black pepper,to taste
Method
Step 1
In a slow cooker,combine all ingredients,except seasoning and rise. Mix well,cover slow cooker and cook on low-heat setting for 6-8 hours,adding rice during last 2 hours. Season with salt and black pepper.
Step 2
Turn off slow cooker. Remove chicken soup from slow cooker. Ladle into soup bowls and serve.
