Slow Cooker Coffee Pot Roast

Ingredients

  • 2 large yellow onions,peeled and sliced
  • 3 pounds (1.44 kg) beef rump roast
  • 1 cup (250 ml) strong coffee
  • 1/4 cup (60 ml) soy sauce
  • 1 clove garlic,peeled and minced
  • 1 teaspoon dried oregano leaves
  • 2 bay leaves

Method

Step 1

Arrange half of the sliced onion in the slow cooker. Top with beef roast and remaining onion. Add minced garlic, coffee, soy sauce, oregano, and bay leaves. Cover slow cooker and cook on low-heat setting for 6-8 hours.

Step 2

Discard bay leaves. Serve slow cooker coffee pot roast with broth.
