Slow Cooker Chicken Stew with Spinach Rice
Spinach Rice is a delicious, flavorful accompaniment to this yummy French-style chicken stew.
Makes 6 servings
Ingredients: 1 whole chicken (abpout2 pounds (960 g), cut up, 1 cup (250 ml) reduced-sodium fat-free chicken broth, 1 can (6 oz (180 ml) tomato paste, 8 medium tomatoes, seeded and coarsely chopped, 3/4 cup (180 ml) chopped yellow onion, 3/4 cup (180 ml) chopped red bell pepper, 3/4 cup (180 ml) sliced mushrooms, 1 clove garlic, peeled and minced,1/2 teaspoon (3 ml) dried basil, 1/2 teaspoon (3 ml) dried tarragon, 1/2 teaspoon (3 ml) dried oregano leaves, a pinch of ground nutmeg, 2 medium zucchini, sliced, 1/4 cup (60 ml) pitted black olives, 1-2 tablespoons (15-30 ml) cornstarch, 2-4 tablespoons (30-60 ml) cold water, salt, and freshly ground black pepper, to taste, Spinach Rice (recipe follows)
Instructions: In a 4-6-quart (4-6 L) slow cooker, combine all ingredients, except zucchini, black olives, cornstarch, water, seasoning, and Spinach Recipe. Cover the pot and cook on a low-heat setting for 6-8 hours.
Open the lid and stir in chopped zucchini and black olives during the last 20 minutes, then stir in the combined cornstarch and water mixture. Cook, stirring, for 2-3 minutes. Increase heat to high and cook for a further 10 minutes.
Season to taste with salt and black pepper. Stir well. Serve over Spinach Rice.
Spinach Rice Recipe
makes 4 cups
Ingredients: 1/4 cup (60 ml) chopped yellow onion, 1¼ cups (310 ml) uncooked rice, 2½ cups (625 ml) reduced-sodium fat-free chicken broth, 2 cups (500 ml) sliced packed spinach leaves.
Instructions: Lightly grease a medium saucepan with nonstick cooking spray. Add chopped yellow onion and sauté, stirring occasionally, until tender, for 2-3 minutes. Stir in uncooked rice and chicken broth. Bring mixture to a boil, then reduce heat to simmer, cover and cook until rice is tender, for about 25 minutes, stirring in spinach during the last 10 minutes.
Slow Cooker Crack Chicken Recipe
- 1 pound (480 g) bone;less and skinless chicken breasts
- 8 oz (240 ml) cream cheese
- 1 package dry Ranch dressing mix
- 1/2 pound (240 g) cooked and crumbled bacon
- 1 talespoon Dijon mustard
Place chicken breasts on the bottom of a slow cooker. Top with cream cheese, Ranch mix, mustard, and crumbled bacon.
Cover the pot and cook on a low-heat setting for 6-8 hours.
Turn off the slow cooker and open the lid. Using two forks, shred cooked chicken. Serve hot.
