Cooking your meal in a crockpot can be as simple or complex as you want, depending on what type of cooking instructions you want to follow.

For example, if you know how long the dish will take and you want it cooked for a certain amount of time with very little fuss, set your crockpot on low and cook your dish for 12 hours. Nah, I’m not a fan of that. What I prefer to do is to set my crockpot on high and cook my dish for at least four hours. This allows the food to become really tender without having to worry about overcooking it.

Slow Cooker Cream Cheese Chicken with Broccoli

Ingredients

  • 4 pounds (1.96 kg) skinless and boneless chicken breasts, cut into bite pieces
  • 1 tablespoon olive oil
  • 1 package (1oz(30g) Italian salad dressing mix
  • 2 cups sliced mushrooms
  • 1 cup onion, peeled and sliced
  • 1 can (10¾oz (320ml)) condensed low-fat cream of chicken soup, undiluted
  • 1 bag (10oz (300g)) frozen broccoli florets, thawed
  • 1 package( 8 oz (240g)) reduced-fat cream cheese, cubed into small cubes
  • 1/4 cup (60 ml) dry sherry
  • hot cooked pasta

Method

Step 1

In a mixing bowl, combine chicken and olive oil. Toss well and sprinkle with Italian salad dressing mix.

Step 2

Place in a 5-quart (4.7l) slow cooker. Cover and cook on a low-heat setting for 3 hours.

Step 3

In a greased large nonstick skillet, combine mushrooms and onion. Cook over medium heat until onions are tender, stirring occasionally.

Step 4

Add chicken soup, broccoli cream cheese, and cherry to the mushroom mixture. Cook, stirring, until hot. Transfer mixture to slow cooker.

Step 5

Cover and cook on a low-heat setting for 1 hour. Serve slow cooker cream cheese chicken with broccoli over pasta.
